Impossible Beef Enchilada Pie | Bisquick Recipe

Ingredients
1 lb. ground beef
1 c. chopped onion
2 cloves garlic, finely chopped
2 tsp. chili powder
1/2 tsp. dried oregano leaves
1/2 tsp. salt
1/4 tsp. pepper
8 oz. taco sauce
2/3 c. finely crushed tortilla chips
2 c. shredded Cheddar cheese (8 oz.)
1 1/4 c. milk
3 eggs
3/4 c. Bisquick

Cooking Directions

Heat oven to 400 degrees. Grease pie plate 10 x 1 1/2 inch. Cook and stir ground beef, onion and garlic until brown; drain. Stir in chili powder, oregano, salt, pepper and 1/2 cup taco sauce. Sprinkle tortilla chips evenly in plate. Top with 1 1/2 cups cheese; spread with beef mixture.

Beat milk, eggs and baking mix until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, 25-30 minutes. Spread remaining taco sauce over top; sprinkle with remaining cheese. Bake until cheese is melted, 3-5 minutes. Cool 10 minutes. Serve with chopped tomato, shredded lettuce and sour cream if desired. 6-8 servings.

Bisquick Cheese Pizza Recipe

Ingredients

1-1/2 cups Bisquick Original baking mix
1/3 cup very hot water
1 can (8 ounces) pizza sauce
1-1/2 cups shredded mozzarella cheese (OR Parmesan cheese) (6 ounces)

Cooking Directions
Move oven rack to lowest position. Heat oven to 450 degrees. Grease 12-inch pizza pan. Stir baking mix and water until soft dough forms. Pat dough in pizza pan, using fingers dipped in baking mix; pinch edges, forming 1/2 inch rim. Spread pizza sauce over crust. Sprinkle with cheese (I used Parmesan cheese, but its all up to you). Bake 12-15 minutes or until crust is brown and cheese is bubbly. 

Yields: 4 serving.
